Glass Slipper Galley Grub
Making healthy, easy to prepare and clean up meals is no easy feat in such a small galley. We have a 3 burner propane stove with an oven. Sadly the oven does not have an automatic thermostat so you must keep a watchful eye while baking. Our refrigerator with its small freezer is under the galley counter (on the right side of the picture). It holds a fair amount of food, but is hard to keep organized. We are able to make ice the old fashioned way using a vertical, stainless steel ice tray. As you can see I do have my Kitchen Aid mixer on board. It's been my favorite kitchen appliance for over 20 years. It is held secure by two large eye brackets and a very strong line. I also have a set of Magma stainless steel, nesting pots & pans and a pressure cooker. Our dish basked on the left, holds 3 of each size plate & bowl. We keep the rest of our set of dishes stowed in the back of a cabinet and take them out only when serving guests. Our sink arrangement is a deep stainless steel sink with a foot water pump/faucet. We heat hot water in the tea pot for washing dishes and then rinse in cold.

I enjoy cooking and although it's a challenge, the view from my galley window is always awesome! From time to time I'll share some of our favorite recipes and tips.

Flat Bread
This is an easy to make, yummy and healthy bread to make for sandwich wraps. It is Coleen's favorite bread!
1 1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
1 T olive oil
1/2 cup water
Mix all ingredients. Put in a zip lock bag, or cover with plastic wrap and let rest for one hour. Then divide into 8 equally sized balls. Flatten each with a rolling pin. Cook in a large skillet sprayed with PAM, one to two minutes each side. These taste better when fresh, so I usually one cook 2 to 4 at a time and leave the rest for the next day.
Homemade Pizza Dough
We use this dough for pizza, focaccia, and cinnamon rolls too. It's super easy and I try to keep some in fridge for those last minute cocktail parties. Just spread out the dough, brush on a little olive oil, black olives, sun-dried tomatoes... and it makes a yummy appetizer. For cinnamon rolls, just roll into a rectangle, brush with melted butter, sprinkle heavily with brown sugar and cinnamon, roll up into a log shape, and cut into 2 inch pieces....
2 1/2 cups flour
2 teaspoons yeast
1 teaspoon salt
2 teaspoons sugar
1 1/2 tablespoon olive oil
1 cup warm water
Mix all dry ingredients, then add the wet. Mix to form a soft dough. Knead for a few minutes (I use my Kitchen Aid mixer for this part). Cover and set to rise for 1 1/2 hours.
